Three rules that keep you from over-ordering

Count the dishes, not just the guests. Every extra dish on the table reduces how much of each one people take. Two rice dishes means half portions of each.

Match the event. Weddings and burials eat more per head than office breaks and church programmes, where one plate and a drink is usually the pattern.

Plan the take-home. Nigerian guests often leave with a pack. Chin chin, buns and pies travel best — a small buffer of these costs less than running short of hot food.

Nigerian party food quantities — questions

How much small chops per person for a Nigerian party?

Five to seven pieces per guest when small chops sit alongside a main meal, and eight to ten pieces when they are the only food served. For 100 guests that is roughly 600 pieces, or 800 to 1,000 for a chops-only reception.

How much jollof rice per person?

About 8 to 10 ounces of cooked rice per guest when jollof is the main dish. If fried rice or swallow is also on the table, plan 4 to 5 ounces of each instead.

How many puff puff per person?

Three to four pieces each as a snack. One 30-piece tray comfortably covers 8 to 10 guests.

How many pies should I order per guest?

One to two per guest. Pies are filling, so one each is usually enough when other food is served — a 12-pie party pack suits 8 to 12 guests.

Should I order extra food?

Add about 10 percent for a family event where guests bring extras, and 15 to 20 percent for an open church or association programme where numbers move on the day.

How far ahead should I place the order?

Party trays need 48 hours' notice, or 72 hours during holidays and graduation season. Full catering for a wedding is best booked four to eight weeks ahead. Smaller packs ordered before 3:00 p.m. can be collected the same day.
